The sixth city of Round the World, Shichiken and Ducasse Paris’ tour to seven cities around the world, was London, England.

The event was held on November 5 at Alain Ducasse at the Dorchester, located next to the lush Hyde Park. It is a special place where the energy of London meets the harmony of nature.

The following five drinks were prepared on that day, as at the first event.

-       Alain Ducasse Sparkling Sake
-       Sparkling Yama no Kasumi
-       Junmai Daiginjo Kinunoaji
-       Junmai Furinbisan
-       Alain Ducasse Sustainable Spirits

“An elegant sake with a floral or deep melon aroma and light ginger notes, it stands out for its depth,” said Executive Chef Jean-Philippe, describing Alain Ducasse Sparkling Sake.
He aimed to create a dish that highlighted the characteristics of each sake.

“The purity and floral notes of Junmai Daiginjo were harmonized with citrus and sweet shrimp, while the earthy nuances of Junmai sake were complemented with a wild mushroom dish reminiscent of the forest.”

The gorgeous, silky lightness of sake was combined with the salty and chalky characteristics of cheese in one dish.

The Japanese Ambassador to the UK, Ambassador Hiroshi Suzuki, and his wife who also attended the event, and other guests seemed to enjoy the festive banquet.

“Many of the guests were unfamiliar with sake. They were surprised by the complexity of the flavors and the possibilities of pairing sake with a variety of foods.”

Philippe, pleased with the positive feedback, continued, “My impression of sake is the culmination of tradition, a wealth of knowledge, and a variety of fermentation techniques. I find sake very complex and difficult to understand, but it is also fun to explore, and I am fascinated every time I discover it.”

Philippe himself seemed to enjoy this special feast with Shichiken, as he has great respect for the craftsmanship and patience behind sake.

The special banquet, where London-style French cuisine and sake met, came to a successful conclusion.

The next stop was New York, USA, the last stop of Round the World.
