Le Chocolat Alain Ducasse and Shichiken’s new collaboration.

Single-origin ganache & Alain Ducasse Sustainable Spirits by Shichiken is a marriage of Alain Ducasse Sustainable Spirits*, a distilled spirit released by Shichiken at the end of 2023, and cacao from different regions. Dark chocolate is used to achieve a balance between the bitterness and acidity of chocolate and the clean flavor of distilled sake.

Alain Ducasse Sustainable Spirits with a gorgeous aroma of sake lees is paired with three flavors; a Madagascar cacao ganache with a red fruit-like acidity, a Peruvian cacao ganache with a conventional cacao feel and the richness of ripe fruit, and a Java cacao ganache with a smoky taste.

*Alain Ducasse Sustainable Spirits was created by Shichiken and Alain Ducasse, based on the SDGs philosophy. It is the only distilled spirit in the world that is produced by distilling the aromatic alcohol contained in sake lees and aging it in whisky barrels.

Executive Chef Chocolatier & Pastry Chef at Le Chocolat Alain Ducasse Tokyo

In this collaboration, we seek to express the distinct flavor of each cacao from different regions while introducing Alain Ducasse Sustainable Spirits’ gorgeous aroma of sake lees and the spirit itself. We used dark chocolate and carefully balanced the bitterness and acidity of the chocolate with the bright, clean flavor of distilled sake. Please enjoy the taste of the three types of chocolate as if you were wine-tasting.

A sustainable relationship between Shichiken and Alain Ducasse

Shichiken and Alain Ducasse launched Alain Ducasse Sparkling Sake in 2021, and held events to pair the sake with Alain Ducasse’s cuisine at Le Meurice Alain Ducasse in palace hotel in Paris, as well as BEIGE Alain Ducasse Tokyo in Ginza in 2022. Both events were highly acclaimed by the media and gourmets in Japan and France.

Alain Ducasse Sparkling Sake is a product that we have crafted to convey the original, innovative, and traditional Japanese sake industry to the world. It was also served at the G7 Hiroshima Summit in May 2023 as a representative product of Japan. During this process and dialogue, Shichiken and Alain Ducasse shared a common understanding of how we can build a sustainable future and society that values nature in the sake and gastronomy industries.

Alain Ducasse Sustainable Spirits utilizing sake lees was created from this mutual understanding and through a series of tastings and exchanges of opinion. Alain Ducasse Sustainable Spirits and Le Chocolat Alain Ducasse, a chocolatier run by Alain Ducasse, share the same values of tradition and innovation, and the art of craftsmanship, which made this collaboration possible.
