Striving to transform the culture of sake brewing and transcend its traditions and long history,
Shichiken has created an original series of exquisite sparkling sake after many years of quest and detailed development.
Offering new occasions to enjoy sake, each one of Shichiken’s sparkling sake pairs excellently
with a wide range of cuisines to suit today’s multicultural society,
and the fine bubbles with a rich bouquet from the secondary fermentation in the bottle make it the perfect drink for toasting.
The depth and elegance of rice and the vibrantly fresh bubbles compose a beautiful symphony in the glass,
establishing a completely new notion of sake. Shichiken presents “sake that transcends sake” for the true sake enthusiast.
The ultimate luxurious, refreshing toast
Medium-dry with a bright acidity and notes of lemon, macadamia nuts, ricotta cheese and apple pie dancing around a fine and long-lasting mousse. A long luxurious finish completes this refreshing sensation like bathing under a canopy of trees, with subtle but profound overtones of maple syrup and vanilla and some minerality and other tertiary aromas from maturation in Suntory Hakushu whiskey barrels, which add extra regional essence and depth to this exquisite symphony of classic and modern sake-brewing methods. Enjoy in a flute, on its own or with dishes like Peking Duck.
A new sake experience aiming for the stars
Named after the starry skies of Hakushu. Secondary fermentation in the bottle elevates this daiginjo sake to new heights with an impressive first impact. A straight line of bubbles form and glitter like stars as notes of pink grapefruit, marshmallows and cotton candy float towards the nose. Dry with a hint of sweetness followed by a short, crisp finish with a lively mousse stimulating the senses throughout. Round and voluminous with plenty of umami that will accentuate simple aperitifs like liver pate or white fish dishes. Put in a flute and enjoy the show.
A colorful sake renaissance for a high-class dining experience
Like the rainbow conjured up by this sake, the combination of modern and traditional sake techniques creates a diverse spectrum of flavors arcing across the palate punctuated by a spritely mousse. Vibrant through the mid-palate with notes of pear, cinnamon, toast, hay, fig, fresh almond, white flowers and a hint of melon executed with richness, depth and freshness cut away by a super-refreshing, short finish. Fine bubbles from the secondary fermentation in the bottle create an elegant mouthfeel with some grip. Try pairing with pork dishes and blue cheese.
A brand new taste experience challenging the limits of sake
Particles of rice dance in the glass like droplets of snow with tiny bubbles – reminiscent of the mists that adorn the peak of the nearby Mt. Kaikoma, the inspiration for this cloudy sake. Pronounced aromas of rare cheesecake, butter, pineapple and coconut cream. Super malty on the palate with a touch of salinity and a well-balanced refreshing sweetness. Depth and sophistication produce a velvety texture in the mouth. The long, umami-fueled finish leaves you thirsting for more. Enjoy on its own in a flute, or with food like Hawaiian pizza, or even in a cocktail.
Avant-garde first-impact sake
On entering the glass, it begins to bloom with pronounced floral and fruity nose of wild strawberry, aniseed and yogurt. It is charming, silky-smooth, lively and tangy with a hint of sweetness that never cloys. It achieves an elegant complexity by interweaving traditional and modern elements just like the French maestro from which it draws its inspiration. A slight sweetness and bitterness are cleaned away by a short finish. The essence of sake transformed through a second in-bottle fermentation into the perfect toast that accentuates but doesn't steal the limelight from the food you pair with it.
